Michele, I've downloaded OOo 3.0 and Star Office 8 locally. You can get the builds here:

Anyway, it looks like the new look and feel isn't much different as far as I can tell with this version of OOo.

Here are the steps I had to take to get StarOffice 8 to install
From a console do the following:
tar xvjf ./OOo-Dev_DEV300_m7_LinuxIntel_install_en-US.tar.gz
cd DEV300_m7_native_packed-1_en-US.9293/RPMS/
sudo rpm -Uvh *.rpm
StarOffice 8

Here are the steps I had to take to get StarOffice 8 to install
From a console do the following:
xhost +
su
rm -rf /var/tmp/unpack_staroffice/
sh so-8-eval-pp6-bin-linux-en-US.sh
NOTE: If the JAVA install buttons don't show up, just resize the window to have them appear
