basically:
you need 1-2 packs of chicken wings
1 sack of flour
one stick of butter
2 bottles of franks red hot sauce
salt, pepper, paprika
1 jar cheap ground cayane pepper
1-2 quarts buttermilk
here is the perfect way, you can cut corners:
* cut wings in half (so you have a wing and a drum); wash and put in fridge overnight to drain blood and shit
* put bag of flour, some salt, some pepper, some paprika and a bunch of ground cayane, into a double baged garbage bag (make sure it is plain plasic not scented or your flour will smell
* drop drained wings into bowl with butter milk a few at a time; shake off excess buttermilk and drop into trashbag full of flour mixture
* do that for all the wings, periodically shake the bag of flour and make sure everything is mixed up good
* you heat to oil to ~350 degress F, cook 10-15 at a time if you have a big enough pot, they take about 10 mins but should float in the oil when they are done. it is not a bad idea to poke at then once/twice while frying to make sure they are not sticking together
* we usually fry outside and bring the finished batch inside to the stove to do the coating:
* sauces:
* hot sauce:
2 bottles of tabasco/franks red hot
1 stick of butter
pepper
cayane
* melt the butter on the stove
* mix in the franks and seasoning
* mix very well with wisk until it is very consistant
* turn off heat
* warm back up when ready to use
* BBQ/honey
2 bottles of generic bbq sauce whatever flavor
1 cup honey
* mix the stuff on the stove on low until very consistant and thinner
* this sauce might be good on wings you fry up without the flour batter
more:
* I have both these sauces on the stove ready when the first batch of chicken is done
* you can dunk the chicken in a sauce and use a spoon or something to cover it and tongs to get it out or just have another deep bowl or wok like thing to toss the chicken in and just pour some sauce on the chicken in that and toss to cover it
* when you have the first batch down you can put it in the oven on warm and keep adding to the pile until you are done frying
this ends up being a huge mess with all your dishes used but it is good. read over the above and let me know if something doesnt make sense or is left out.
