10 large white mushrooms
curry paste
milk
italian spices + paprika powder
olive oil
red onion
slice sausage into thin slices
slice mushrooms into slices
slice small red onion, shred
in a large skillet, fry onion with some oil until hazy, add sausage, add spices
flip over sausage slices, add mushrooms
add 3 teaspoons of curry paste (to taste)
add splash of milk, stir and let it simmer
beat 2 eggs, add spices, some milk, mix thoroughly
make a well in the middle of the skillet, turn up the heat, pour in some egg, stir with wooden spoon until hard, move chunks outside and pour more egg in
when all the egg is fried, stir some more, let it simmer for a minute, sprinkle some salt and fresh parsley over
serve with baguette pieces
