Coolguy's Chocolate & Peanut Butter Chip Cookies
*Ingredients:
3/4 cup (1.5 sticks) butter, softened
1/8 cup (4 tbs) lard
3/4 cup packed brown sugar
1/3 cup granulated sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup whole wheat flour
1/2 cup oats
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup chocolate chips
3/4 cup peanut butter chips
1 tbs flax seeds (optional)
*Directions:
Mix butter, lard, brown sugar, granulated sugar and vanilla extract in large bowl until creamy. Add eggs one at a time, beating well after each addition. Add flour, oats, baking powder and salt and mix together until just combined. Stir in chips and seeds.
Place plastic wrap over bowl and chill in freezer for 20 min.
Preheat oven to 375°F. Roll into 1" balls and place onto greased baking sheets. Use flat surface (e.g. bottom of a cup) to press cookies about 1/3" thick.
Bake for 8 to 10 minutes or until edges just begin to brown. Immediately place on racks to cool.
Yields ~5 dozen cookies (they're small!). Enjoy. But not too much. Seriously...put the cookie down. You've had enough for now :o<
